What You Need:
Ingredients (Serves 6)
For the Chicken:
- 1 chicken breast
- 200 ml buttermilk
- 15 g Buffalo sauce
- 10 g ketchup
- 1 tsp honey (or to taste)
- Salt and pepper
- 150 g breadcrumbs
- 1 tsp paprika
- 1 tsp salt
- 1 tsp pepper
- Oil spray
For the Mac and Cheese:
- 450 ml heavy cream
- 1 ball fresh mozzarella, grated
- 150 g shredded mozzarella
- 125 g shredded cheddar
- 4 slices processed cheese (like American cheese or sandwich slices)
- 10 g butter
- 1 tsp all-purpose flour
- 150 ml milk
- 2 tsp garlic powder
- 2 tsp paprika
- 2 tsp salt
- 1 tsp pepper
- 220 g Pasta of your choice (cooked al dente)
Splash of pasta water (optional)
Preparation – How to Make Fluffy Burger Buns
1. Marinate the Chicken
- Cut the chicken breast into small bite-sized cubes. In a bowl, mix buttermilk, Buffalo sauce, ketchup, honey, salt, and pepper. Add the chicken pieces and let them marinate for at least 30 minutes (overnight gives it even more flavor).
2. Bread and Bake
- Mix breadcrumbs with paprika, salt, and pepper. Coat the marinated chicken cubes thoroughly. Place them on a baking tray lined with parchment paper. Spray generously with oil. Bake at 190°C (375°F) until golden and crispy — turn the pieces halfway through baking for even browning.
3. Make the Cheese Sauce
- Melt the butter in a saucepan over medium heat. Right after the butter melts, add garlic powder, paprika, salt, and pepper. Stir briefly, then add the flour and mix into a smooth paste.
- Add the milk and whisk until smooth, then pour in the heavy cream. Add all the cheeses: shredded mozzarella, cheddar, grated fresh mozzarella, and the 4 slices of processed cheese. Stir until melted and creamy.
- Add your cooked pasta and a splash of pasta water. Mix everything until silky and well combined.
Tips & Variations
No buttermilk?
- Use milk with a splash of lemon juice as a quick substitute.
More heat:
- Add chili flakes or extra Buffalo sauce to the marinade.
More sweetness:
- Drizzle a bit of honey on the chicken before baking.
Make it gluten-free:
- Use gluten-free breadcrumbs and flour.
