There are brownies – and then there are these brownies.
Crackly on top, gooey in the center, and packed with deep chocolate flavor thanks to both melted milk chocolate and cocoa powder.
They’re rich without being too heavy, sweet but balanced, and fudgy without being raw. Basically: the kind of brownie that ruins all others.
Why this brownie recipe?
Because it’s simple, no mixer needed, and delivers bakery-style brownies straight from your kitchen.
No dry edges, no cakey texture – just shiny tops, moist middles, and that deep chocolate hit you’re craving.
The texture
It’s all about the mix: whipped eggs for that crackly top, melted chocolate and butter for richness, and just enough flour to keep it fudgy.
Want to go all out? Add extra chocolate chunks or nuts.

Tips for next-level muffins
- Don’t skip the whipping – the sugar and eggs need time to create that shiny top.
- Use high-quality chocolate – it makes a difference.
- Let them cool completely before cutting – they’re still setting while cooling.
- Want clean slices? Use a warm knife and wipe between cuts.
Things not to do
- Don’t overbake – dry brownies are just chocolate cake in disguise.
- Don’t skip the cooling time – they’ll fall apart and seem underdone.
- Don’t use dark chocolate unless you adjust the sugar – it’ll be too bitter.
What you need:
- 200 g milk chocolate
- 90 g butter
- 60 g white sugar
- 65 g brown sugar
- 3 eggs
- 1 pinch of salt
- 1 tsp vanilla extract
- 70 g all-purpose flour
- 30 g unsweetened cocoa powder
Preparation
- Preheat your oven to 180°C (350°F), top and bottom heat.
- Melt the milk chocolate and butter together over a water bath until smooth. Let it cool slightly.
- In a separate bowl, whisk the white and brown sugar with the eggs until light and fluffy.
- Add salt and vanilla extract, and mix briefly again.
- Gently fold in the melted chocolate mixture.
- Sift in the flour and cocoa powder, then fold in just until combined – don’t overmix.
Optional: fold in chocolate chunks or chopped nuts. - Pour into a greased or lined pan and bake for 25–30 minutes.
- A toothpick should come out with moist crumbs (not raw batter).
- Let them cool completely before slicing for clean, fudgy pieces.
