A crispy sushi burrito with salmon combines soft sushi rice, fresh avocado, cucumber, cream cheese, and salmon, all wrapped in nori, coated in panko, and fried until golden. It is a fun fusion recipe that looks impressive, tastes fresh and savory, and gives you that perfect mix of crispy exterior and soft sushi-style filling.

What Is a Crispy Sushi Burrito?
A crispy sushi burrito is a sushi-inspired wrap made with seasoned rice, nori, vegetables, and salmon, then rolled like a burrito and fried for extra crunch. The filling stays soft and creamy inside, while the outside turns crisp and golden.
This version is especially satisfying because the salmon is lightly cured before cooking, which helps improve the flavor. The burrito-style shape also makes it easy to serve, slice, or eat by hand.
Important Note
Do not spread the rice too thick, or the burrito will be hard to roll and fry properly. Also, make sure the salmon is cured and rinsed well before assembling, so the flavor stays clean and not too salty.

Serving Suggestion
Serve the sushi burrito fresh and hot after frying for the best texture. Slice it in half for a clean presentation or serve it whole for a bold, handheld meal. It pairs well with extra teriyaki sauce, spicy mayo, or even a light soy dipping sauce. Best enjoyed right away while the coating is still crisp.

Pro Tips for the Perfect Sushi Burrito
Wash Rice Well – Rinse until the water runs clear for the best sushi rice texture.
Cool the Rice – Warm rice makes rolling harder and can make the nori soggy.
Cure the Salmon First – Salt and sugar help firm up the fish and improve flavor.
Use a Thin Rice Layer – Too much rice makes rolling and frying difficult.
Wrap the Mat – Plastic wrap on the rolling mat keeps the nori from sticking.
Seal With Water – Brush the edge with water so the burrito closes properly.
Fry Evenly – Cook until all sides are golden and the coating is crisp.
Ingredient Notes
Sushi Rice – Forms the base and gives the burrito its classic sushi flavor.
Rice Vinegar – Seasoned with sugar and salt to give the rice balance.
Nori Sheets – Hold the burrito together and create the sushi flavor.
Cucumber – Adds crunch and freshness.
Avocado – Gives the filling a creamy, rich texture.
Salmon – Rolled in long strips and lightly cured before using.
Cream Cheese – Makes the filling smooth and creamy.
Panko Breadcrumbs – Creates the crispy outer coating.
Flour and Water Batter – Helps the panko stick evenly to the burrito.
Ketchup-Mayo or Teriyaki – Used for finishing and decorating.
Ingredients
For the sushi rice
1.5 cups rice
2 cups water
3 tbsp rice vinegar
2 tbsp sugar
1 tsp salt
For the filling
1/2 cucumber, cut into long strips
1 whole avocado, cut into strips
250 g salmon, cut into long strips
1 tbsp salt
1 tbsp sugar
150 g cream cheese
For the coating
5 nori sheets
1/2 cup water
1/3 cup flour
1.5 cups panko breadcrumbs
For finishing
Ketchup-mayo mixture
Teriyaki sauce or unagi sauce
Instructions
Step 1: Prepare the Sushi Rice
Wash the sushi rice for about 10 minutes until the water runs clear. Add 2 cups water to the rice and bring to a boil. Reduce heat to level 3–4 and cook with the lid closed for 15 minutes. Check if the rice sticks to the bottom, if yes, add a little water, stir gently, reduce heat to level 1, and cook for another 15 minutes. Remove from heat and let cool with the lid still on.

Step 2: Make the Rice Vinegar Mixture
In a small pan, combine rice vinegar, sugar, and salt. Bring to a boil until everything dissolves. Let it cool slightly, then pour over the sushi rice. Use an inverted spoon to gently mix without mashing the rice. Let the rice cool completely.

Step 3: Cure the Salmon
Rub the salmon with 1 tbsp salt and 1 tbsp sugar. Place it in an airtight glass container and let it rest in the fridge for 1 hour. After that, rinse with water and pat dry. Cut the salmon into long strips.

Step 4: Prepare the Filling
Cut the cucumber and avocado into long strips. Put the cream cheese into a piping bag for easier assembly.

Step 5: Make the Batter
Mix 1/2 cup water with 1/3 cup flour until you get a batter with a dinner pancake-like consistency. It should be smooth and not too thick. Prepare the panko in a separate bowl.

Step 6: Assemble the Burrito
Place a sheet of nori on a sushi mat wrapped in plastic wrap. Add a thin layer of sushi rice, leaving the end free. Add cucumber, avocado, salmon, and a line of cream cheese.

Step 7: Roll the Burrito
Roll it up like a normal sushi roll, using the mat to help shape it tightly. Brush the open edge with water and seal it well.

Step 8: Coat and Fry
Dip the sealed burrito into the batter, then coat it with panko. Fry until golden and crispy on all sides.

Step 9: Finish and Serve
Drizzle with ketchup-mayo and teriyaki or unagi sauce. Serve immediately.
