Soft, fluffy, and filled with a rich, caramel-like center, this Biscoff Stuffed Brioche Bread is the ultimate sweet indulgence. Each golden bun is braided for a beautiful finish and packed with creamy Biscoff spread, creating a melt-in-your-mouth texture with a perfectly soft crumb.

What Makes Them Special?
This recipe stands out because of its soft, enriched dough and unique shaping technique. The dough is rich but still light, creating a balance between fluffiness and structure. The braided shaping method not only enhances presentation but also distributes the filling evenly.
Another key feature is the Biscoff filling, which adds a deep caramelized flavor with subtle spice notes. Combined with the buttery dough and soft finish, it creates an indulgent but balanced result.
Important Note
Make sure the dough is kneaded until smooth and elastic. Proper kneading is essential for achieving the soft, fluffy brioche texture. Also, do not skip the final resting step after baking — it keeps the bread extra soft.

Serving Suggestion
Serve the brioche slightly warm so the Biscoff filling is soft and creamy. Pair it with coffee, cappuccino, or a glass of milk for the perfect treat. It also works beautifully as a dessert with a dusting of powdered sugar or an extra drizzle of Biscoff on top. Best enjoyed fresh for maximum softness.
Pro Tips for the Perfect Brioche Bread
Use Warm, Not Hot Milk – Too much heat can kill the yeast.
Knead Properly – The dough should be smooth, elastic, and slightly tacky.
Let It Rise Fully – A proper rise ensures a light and airy texture.
Do Not Overfill – Too much Biscoff can leak during baking.
Rest After Baking – Covering with a towel keeps the brioche soft.
Handle Gently – Avoid pressing out too much air when shaping.
Ingredient Notes
Milk – 140 ml warm milk activates the yeast and creates a soft dough.
Yeast – 5 g yeast ensures a good rise and fluffy texture.
Eggs – Add richness, structure, and softness to the brioche.
Butter – 75 g softened butter creates the classic brioche richness.
Flour – 370 g flour forms the base of the dough and provides structure.
Sugar – Adds sweetness and enhances browning.
Biscoff Spread – 400 g creates a rich, creamy filling with caramel notes.

Ingredients
For the brioche dough
140 ml warm milk
5 g yeast
1 1/4 tsp sugar
2 small eggs
75 g soft butter
370 g flour
60 g sugar
1 pinch salt
For the filling
400 g Biscoff spread

Instructions
Step 1: Activate the Yeast
In a small bowl, mix warm milk with yeast and 1 1/4 tsp sugar. Let it sit for about 5 minutes until slightly foamy.

Step 2: Make the Dough
In a large bowl, combine flour, sugar, and salt. Add softened butter, eggs, and the milk-yeast mixture. Knead for 8–10 minutes until the dough is smooth and elastic.

Step 3: First Rise
Cover the bowl and let the dough rise in a warm place for 1–1.5 hours, or until doubled in size.
Step 4: Divide the Dough
Punch down the dough and divide it into 8 equal pieces. Shape each piece into a smooth ball and let them rest for 10 minutes.
Step 5: Shape the Brioche
Roll each dough ball into a small rectangle. Spread or pipe a line of Biscoff along the center. Roll the dough only halfway. On the remaining side, cut about 8 thin strips lengthwise. Fold or twist the strips over the rolled section to create the braided look.

Step 6: Second Rise
Place the shaped pieces on a lined tray. Cover lightly and let them rise for 30–45 minutes until puffy. Then brush them with an egg wash before baking for a golden, glossy finish
Step 7: Bake
Bake at 175°C (top/bottom heat) for 22–24 minutes until golden brown.
Step 8: Finish
Brush immediately with melted butter, then cover with a clean kitchen towel and let them rest for at least 1 hour to keep them soft.
