Pro Tips for Perfect Taquitos
Secure Well – always use toothpicks so the filling doesn’t leak while frying
Don’t Overfill – too much filling makes rolling difficult
Fry in Batches – keeps the oil hot and the taquitos crispy
Remove Toothpicks After Frying – once they’re crispy, they’ll hold their shape

Ingredients
For the Chicken Filling
• 230 g chicken breast
• Salt, black pepper, paprika, garlic powder (to taste)
• 1 tbsp olive oil
• 170 g shredded mozzarella
For Assembly
• 12 mini wheat tortillas
• Toothpicks (to secure while frying)
• Oil for frying
Dips
Guacamole
• 1 ripe avocado
• Lemon juice, to taste
• Salt & pepper
• Garlic powder
• Paprika
Pico de Gallo
• 1 tomato, finely diced
• 1 white onion, finely diced
• 1 green bell pepper, finely diced
• Lemon juice
• Salt & pepper
• Garlic powder
• Fresh parsley, finely chopped

Instructions
Prepare the Chicken
Season the chicken breast with salt, pepper, paprika, and garlic powder. Heat olive oil in a pan and cook the chicken until fully done and lightly golden. Remove from the pan and chop or shred finely.
Make the Filling
In a bowl, combine the cooked chicken with the shredded mozzarella while the chicken is still warm so the cheese starts to soften slightly.
Assemble the Taquitos
Lay a tortilla flat and add a line of the chicken-cheese mixture in the center. Roll tightly into a taquito shape and secure with a toothpick so it doesn’t open while frying. Repeat with all tortillas.
Fry
Heat oil over medium-high heat. Fry the taquitos until golden brown and crispy on all sides, turning carefully. Remove and drain on paper towels.
Make the Dips
Mash the avocado with lemon juice, salt, pepper, garlic powder, and paprika.
Mix all pico de gallo ingredients in a bowl and adjust seasoning to taste.
