• 260 g chicken breast, cut into small cubes

• 1 large onion, thinly sliced

• 1 red bell pepper, thinly sliced

• 1–3 chipotle peppers, finely chopped (to taste)

• 1 tsp honey (or up to 1 tbsp for sweeter)

• 1 tsp salt

• 1 tsp paprika

• 1 tsp garlic powder

• ½ tsp black pepper

• Olive oil

• 30 ml water

• 1 tsp flour (to thicken)

• 250–300 g shredded cheese (mozzarella, cheddar, or mix)

• 2 large 30 cm tortillas (or 4 small)

Instructions

Marinate the Chicken

In a bowl, combine the chicken with salt, paprika, garlic powder, pepper, chopped chipotle, honey and a drizzle of olive oil. Mix well until everything is evenly coated. Cover and place in the fridge while you prepare the vegetables.

Cook the Onions & Peppers

Heat olive oil in a pan over medium heat (level 6). Add the sliced onions and bell peppers and cook slowly for about 15 minutes, stirring often, until soft, glossy and slightly caramelized. If they start sticking, add a small splash of water.

Add the Chicken

Add the marinated chicken to the pan and cook until the chicken is fully done and nicely coated with the vegetables.

Create the Sauce

Pour in about 30 ml water and sprinkle in 1 tsp flour. Stir well and let it simmer briefly until the mixture thickens slightly and becomes juicy and glossy. Remove from heat.
