Ingredients
For the Chicken Filling:
• 400 g chicken breast, cut into small pieces
• 1–2 chipotle peppers in adobo sauce, finely chopped (adjust heat to taste)

• 1 tbsp oil
• 1 tbsp butter (for frying)
• 1 tsp salt
• ½ tsp black pepper
• 1 tsp paprika
• 1 tsp garlic powder
For the Tacos:
• 8 medium tortillas or taco wraps
• Shredded mozzarella (1 handful per taco, or any melting cheese)
• Butter or oil for toasting
For the Ranch Sauce:
• 3 tbsp mayonnaise
• 15–30 ml buttermilk (or milk with a few drops of lemon juice)
• ½ tsp salt
• ½ tsp black pepper
• ½ tsp garlic powder
• 1 tbsp fresh parsley, finely chopped
• A splash of water (optional, to thin the sauce)


Instructions
Prepare the Chicken
Heat oil and butter in a pan over medium heat. Add the chopped chicken and cook for 3–4 minutes until it starts to brown. Add chopped chipotle peppers, salt, pepper, paprika, and garlic powder. Stir well and cook until the chicken is golden and almost cooked through.
Assemble the Tacos
On one half of each tortilla, add a handful of shredded mozzarella. Spoon the chipotle chicken mixture on top of the cheese. Fold the tortilla in half and press gently.
Crisp the Tacos
Heat a clean pan with a bit of butter or oil. In my video, I’m using a crepe maker, it works perfectly for getting that even golden color. I’ve tried making tacos before in a stainless steel pan, but it was honestly a bit tricky to get them evenly crispy. If you have one, I highly recommend using a cast-iron skillet (get yours here) or a crepe maker (get yours here). Toast the tacos on both sides over medium heat until they’re golden, crispy, and the cheese has fully melted.
Make the Ranch Sauce
In a small bowl, mix mayonnaise, buttermilk, salt, pepper, garlic powder, and parsley. Adjust thickness with a splash of water if needed.
