• 240 g ground beef (4 patties, 60 g each)
• 4 slices melting cheese (American or cheddar)
• Butter for toasting buns
For the Caramelized Onions
• 1 large onion, thinly sliced
• 10 g butter
• 1 tbsp sugar
• Salt to taste
For the Chipotle Sauce
• 3 tbsp mayonnaise
• 1 tsp Dijon mustard
• 1 tsp lemon juice
• 1 tsp chipotle paste (or chipotle in adobo, finely chopped)
• 1 tbsp caramelized onions (from above)
• Salt & pepper to taste


Instructions
Caramelize the Onions
Heat butter in a pan over medium-low heat. • Add sliced onions and 1 tbsp sugar. Cook slowly for 15–20 minutes until deep golden brown. Stir occasionally to prevent burning. Add a pinch of salt at the end and set aside.
Make the Chipotle Sauce
In a small bowl, mix mayonnaise, mustard, lemon juice, chipotle paste, and 1 tbsp of the caramelized onions. Season with salt and pepper, and stir until creamy.
Form & Smash the Patties
Roll the beef into 60 g balls (2 per burger). Heat a cast-iron pan or griddle over high heat. Place a beef ball on the hot surface and smash it flat using a burger press or spatula. Season with salt and pepper. Flip once crispy, add a slice of cheese, and cook until melted.
Toast the Garlic Knots
Slice the garlic knots in half like buns. Toast the inside on a hot pan with a bit of butter until golden.
