Pro Tips for the Best McChicken
Freeze the patties: Keeps them firm and prevents breaking in the oil.
Oil temperature is key: 175–180 °C (350–360 °F) is perfect for golden crusts.
Flip once only: Too much movement can break the coating.
Wire rack > paper towels: Keeps crust crunchy instead of soggy.

Ingredients
Chicken patties
1 chicken breast (ca. 310 g)
½ tsp salt
½ tsp black pepper
1 tsp garlic powder
½ tsp MSG
Dry mix
100 g flour
1 tsp baking powder
½ tsp salt
½ tsp black pepper
½ tsp garlic powder
½ tsp MSG
Wet batter
Remaining flour mix 200 ml cold water
For frying
Neutral oil (enough for deep frying)
To serve
3 burger buns
Iceberg lettuce, shredded
Pickles 12 slices
McChicken-style sauce (see below)
McChicken Sauce (Copycat)
4 tbsp mayo
1 tsp mustard
1 tsp lemon juice
½ tsp garlic powder
½ tsp onion powder
Salt & pepper to taste

Instructions
Prepare the patties
Cut the chicken breast into chunks and blend in a mixer with salt, pepper, garlic powder, and MSG until smooth. Oil your hands, divide the mixture into 3 equal portions, and shape into round patties. Place on a plate lined with baking paper and freeze for 1 hour to firm up.
Coating
In a bowl, mix flour, baking powder, salt, pepper, garlic powder, and MSG. Dredge the frozen patties in the flour mix. Add 200 ml cold water to the same bowl, stir into a smooth batter. Dip each patty into the batter and place straight into hot oil.
Frying
Fry the patties at heat level 8/9 for about 4 minutes, or until golden brown. Drain on paper towels.
Assemble the sandwich
Toast the burger buns. Spread McChicken sauce on the bottom bun, add shredded lettuce and pickle slices. Place the crispy chicken patty on top, then add more sauce if you like. Close with the top bun.
