Pro Tips for Perfect Cheesy Potato Balls
Double Coat the Chicken: Essential for crunch that lasts.
Rest After Frying: Don’t slice too early; the carryover heat finishes cooking inside.
Balance the Lemon: Use zest for aroma and just a small squeeze of juice for brightness.
Save Pasta Water: It makes your sauce silky and helps it cling to the pasta.

Ingredients
For the Crispy Chicken
1 large chicken breast, halved
½ tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp oregano
½ tsp garlic powder
A pinch of MSG (optional)
1 tbsp oil
For the coating
80 g all-purpose flour (optional, for first coating)
120 ml milk (or 1 beaten egg)
100 g panko breadcrumbs
Same seasoning mix as above (except salt)
For the Pasta & Sauce
110 g pasta of your choice
2 garlic cloves, minced
1 tbsp butter
180 ml heavy cream
70 ml milk
Zest of 1 lemon (organic)
Juice of ½ lemon
40 g freshly grated Parmesan
Salt & pepper to taste
A pinch of paprika & oregano

Instructions
Prepare the Chicken
Season chicken halves with salt, pepper, paprika, oregano, garlic powder, and a touch of MSG. Rub with a bit of oil.
Coating (double-layer is best): Dredge in flour (optional). Dip in milk (or egg). Coat in seasoned panko. Repeat milk + panko once more for extra crispiness.
Fry until golden brown and crisp. Do not cut immediately, let rest for 5 minutes so the inside cooks through and stays juicy.
Make the Pasta
Cook pasta until al dente. Save 50 ml of pasta water. In a pan, melt butter and sauté garlic until fragrant. Add cream, milk, seasonings, lemon zest, and a splash of lemon juice. Stir gently. Mix in Parmesan until melted into a smooth sauce. Add pasta water if needed. Toss in the pasta until fully coated.
Assemble
Slice the crispy chicken into strips. Place on top of the creamy pasta. Garnish with extra Parmesan and lemon zest.
