Equipment Needed
Large non-stick skillet or deep frying pan with lid
Mixing bowls (for meatball mixture)

Ingredients
300 g ground beef
1 small splash of agave syrup (or honey)
2 tbsp Thai red curry paste
2 tbsp hoisin sauce
2 tsp pepper
2 tsp curry powder
2 tsp paprika
2 tsp chili powder
3 tbsp cornstarch (or flour)
1 red bell pepper, sliced
1 green bell pepper, sliced
1 small onion, sliced
Sesame oil, for frying
400 ml coconut milk
Fresh parsley and chives, chopped
Optional: extra cornstarch or flour for coating
Serve with: Cooked rice
Step-by-Step Instructions
Prep the vegetables: Slice the red and green bell peppers and the onion into thin strips. Sauté in sesame oil over medium heat until softened.
Season the vegetables:
Add the same spices used for the meatballs:
- 1 tsp curry powder
- 1 tsp paprika
- 1 tsp chili powder
- 1 tsp black pepper
- 1 tbsp red Thai curry paste
- A splash of dark soy-based Asian sauce (very salty – no need for extra salt)
- A small drizzle of agave syrup or honey
Make the meatballs: In a bowl, combine the ground beef, agave syrup, red curry paste, dark salty sauce, pepper, curry, paprika, chili, and cornstarch. Mix until well combined.
Shape the mixture into small meatballs (about 15 pieces). Roll them in a bit of cornstarch or flour for a crispy outer layer.
Push the vegetables to the side of the pan and make space in the center. Place the meatballs into the pan, add a splash of water, cover with a lid, and cook for 5–6 minutes until browned and almost cooked through.
Add the coconut milk and stir gently to combine everything. Simmer for a few more minutes until the sauce thickens slightly and the meatballs are fully cooked.
Finish with chopped parsley and chives.
Serve hot with steamed rice.
Tips and Tricks
- Use cold, damp hands to shape the meatballs evenly and prevent sticking.
- Don’t skip rolling the meatballs in cornstarch or flour – it gives them a crispy, golden crust.
- Add a squeeze of lime or a few drops of fish sauce for extra depth of flavor.
- For a thicker sauce, let the curry simmer uncovered for a few extra minutes after adding the coconut milk.
Storage
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat gently in a pan or microwave until hot.
- Not freezer-friendly due to the coconut milk sauce – it may separate when thawed.
Variations
- Chicken: Swap the ground beef for ground chicken for a lighter version.
- Veggie version: Use plant-based meat alternatives or tofu cubes instead of meatballs.
- Spice level: Adjust the red curry paste and chili to make it milder or spicier.
- Add-ins: Throw in baby spinach, snap peas, or mushrooms for extra veggies.
