Tips and Tricks
- Let fries air-dry after boiling and before frying — moisture is the enemy of crispiness
- Soaking fries in cold water removes excess starch and helps them stay crispy on the outside, fluffy inside
- Use a kitchen thermometer for precise frying temperatures — it really makes a difference
- Don’t skip the double frying — it’s the key to that perfect crunch
- Melt butter gently and avoid browning the garlic — you want it fragrant, not bitter
- Toss fries while they’re still hot — they’ll absorb flavor better
- Grate Parmesan fresh if possible — the texture and flavor are worth it
- Add parsley or chili flakes right before serving for a little extra color or kick
Storage
- Fries are best enjoyed fresh — they lose crispiness quickly
- If you have leftovers:
- Let them cool completely before storing
- Store in an airtight container in the fridge for up to 2 days
- To reheat:
- Use an oven or air fryer at 200 °C (390 °F) for 5–8 minutes until hot and crispy again
- Avoid microwaving — it makes them soggy
- Garlic Parmesan butter can be made ahead and stored in the fridge for up to 1 week
- (Just reheat gently before using)
