Ingredients
Brownie Layer
• 100 g milk chocolate
• 80 g browned butter
• 70 g white sugar
• 100 g brown sugar
• 1 tsp vanilla extract
• 2 medium eggs
• 3.5 tbsp unsweetened cocoa powder
• 60 g flour
• A pinch of salt
Cookie Layer
• 80 g melted butter
• 75 g brown sugar
• 70 g white sugar
• 1 medium egg
• 1 tsp vanilla extract
• 110 g flour
• A pinch of salt
• 90 g chocolate chips or chopped chocolate~10 g extra chocolate chips for topping
~10 g chocolate chips for topping
~14 oreos
Instructions
- Brown the butter: In a small saucepan, melt the butter over medium heat, stirring constantly, until it turns golden brown and smells nutty. Remove from heat and immediately pour it over the chopped chocolate in a bowl. Stir until fully melted and smooth. Let this cool completely — it should not be warm when you continue.
- Foamy egg mixture: In a separate bowl, whisk together the sugars and eggs using a hand mixer (or whisk by hand) for several minutes until pale, thick, and foamy.
- Combine layers: Gently fold the cooled chocolate-butter mixture into the foamy egg mixture. Then sift in cocoa powder, flour, and salt and mix until just combined.
- Prepare the cookie dough: Stir the melted butter, brown sugar, and white sugar until smooth. Add the egg and vanilla extract and mix again. Fold in the flour, salt, and chocolate chips.
- Assemble:
Pour a layer of brownie batter into a parchment-lined pan. Add spoonfuls of cookie dough and place 9 Oreos on top. Pour over the remaining brownie batter, then scatter a few more bits of cookie dough and chopped Oreos on top — but don’t overdo it, so the brownie layer still shows through. Finish with a handful of chocolate chips. If you have leftover cookie dough, freeze it or bake a few cookies separately. - Bake at 175 °C (top/bottom heat) for 25–27 minutes, or until a toothpick inserted in the center comes out with moist crumbs.
