Pro Tips for Perfect Crispiness
Double fry – this is key for maximum crunchLet them rest on a rack – keeps them crispyDon’t overcrowd the oil – fry in batchesCoat well in dry mix – press lightly for a textured crustAdd chili flakes to the sauce if you like it spicyPrepare the Chicken
- Cut the chicken breast into evenly sized bite-sized pieces and set aside.
Make the Batter
- In a bowl, mix flour, water, cornstarch, honey, salt, pepper, paprika, and garlic powder until smooth. Add the chicken pieces and mix until fully coated.
Coat the Chicken
- In a separate bowl, combine 60 g flour and 30 g cornstarch. Take each coated chicken piece and toss it in the dry mixture. Press slightly so the coating sticks well. This creates extra crispiness.
Fry (Double Fry Method)
- Heat oil to medium-high (level 8 out of 9). Fry the chicken bites until golden and crispy. Remove and let them rest briefly on a wire rack. Once all pieces are fried, fry them a second time for 1–2 minutes until deeply golden and extra crispy. Remove and let drain again on a rack.
Make the Honey Garlic Sauce
- While the chicken is frying, prepare the sauce. In a pan, gently heat honey and add the minced garlic. Season with salt, pepper, paprika, and garlic powder. Let it simmer briefly until slightly thickened and aromatic.
Combine
- Place the hot, crispy chicken bites in a large bowl. Pour the warm honey garlic sauce over them and toss until evenly coated. Serve immediately while crispy.
