Golden-toasted flatbread, tender spiced chicken, and a creamy garlic sauce that ties it all together - this homemade shawarma wrap is the kind of meal that hits every note. Tangy pickles and a drizzle of pomegranate syrup add just the right contrast to the bold, aromatic marinade.

  • 2 chicken breasts 400–450 g, preferably free-range for the best texture and flavor
  • 2 tbsp yogurt 3.5% fat, which helps tenderize the meat and keeps it juicy during cooking
  • 1 tbsp tomato paste for a rich, deep base flavor in the marinade
  • Juice of ½ a fresh lemon squeezed just before use to brighten the marinade with acidity
  • 1 –2 tbsp olive oil to help the marinade coat the chicken evenly and prevent sticking
  • ½ tsp pomegranate syrup adding a subtle sweet-tart depth that balances the other flavors
  • 1 tsp MSG optional, which enhances the overall savory, umami quality of the dish
Spices:
  • Salt to season the chicken thoroughly and draw out its natural flavors
  • Black pepper freshly ground if possible, for a mild heat and subtle sharpness
  • Paprika adding a warm, slightly sweet smokiness and a beautiful red color to the chicken
  • Cumin bringing a warm, earthy depth that pairs perfectly with the other spices

For the Filling
  • 240 g pickles cut into strips (yes, it’s a lot — but it’s key for the flavor)
  • Toum garlic sauce, about 2–3 heaping tbsp per wrap
Alternative:
  • If you can’t find Toum use aioli as a substitute
  • extra pomegranate syrup for finishing inside the wrap
For the Wrap
  • 4 –8 flatbreads or tortillas depending on preference
  • Optional:
  • some wraps can be double-wrapped for extra stability and crunch

Methode
 

Marinate the Chicken
  1. In a bowl, combine the yogurt, tomato paste, lemon juice, olive oil, pomegranate syrup, and all your spices. Stir until you have a smooth, fragrant marinade.
  2. Add the chicken and mix thoroughly until every surface is fully coated. Use your hands or a spoon to press the marinade into the meat for maximum flavor.
  3. Let the chicken marinate for at least 30 minutes, the longer you leave it, the deeper the flavors will be. For best results, refrigerate for 2–4 hours or overnight.
Cook the Chicken
  1. Cook the marinated chicken in a hot pan with a little oil over medium-high heat, searing it until fully cooked through and slightly charred on the outside.
  2. Make sure to let the edges crisp up nicely, those golden, caramelized bits are where the deepest flavor comes from and make all the difference.
  3. Remove the chicken from the pan and let it rest for a couple of minutes before slicing it into thin, even strips.
Prepare the Wrap Base
  1. Take your flatbread or tortilla and lay it flat on a clean surface, ready to build your wrap.
  2. Spread a thin, even layer of sauce from the pan or a lightly seasoned oil onto the bread before toasting, this small step adds a rich, extra layer of flavor as the bread crisps up beautifully.
  3. Lightly toast the bread in a pan over medium heat until it is warm, slightly golden, and just crispy enough to hold all the fillings without becoming too stiff.
Assemble the Shawarma
  1. Add a generous amount of sliced chicken to the center of the bread, spreading it evenly so every bite is packed with flavor.
  2. Top with plenty of pickle strips, which add a satisfying crunch and a tangy contrast that cuts through the richness of the chicken.
  3. Add 2–3 heaping tablespoons of Toum generously over the filling — don't be shy with it, as this is what keeps the wrap juicy, creamy, and utterly delicious.
  4. Drizzle a little pomegranate syrup over everything just before closing, adding a subtle sweet-tart finish that ties all the flavors together beautifully.
  5. Wrap tightly, folding in the sides as you roll to keep all the fillings secure and the wrap easy to hold.
Optional Final Step (Highly Recommended)
  1. Toast the wrapped shawarma in a pan until crispy and golden on the outside.
  2. This gives it that authentic street food texture.
