Pro Tips for Success
Don’t Skip the Marinade: The pickle juice brine is what makes the chicken extra tender and flavorful.
Double Coat = Maximum Crunch: Flour → egg wash → flour again – this ensures that signature crispy shell.
Hot Oil Only: Make sure the oil is bubbling hot before frying – if it’s not, the breading will soak up oil and turn soggy.
Rest the Chicken: Let the fried chicken sit for a couple of minutes before slicing or serving – it finishes cooking inside and stays juicy.
Homemade Sauce: Make a bigger batch and store it in the fridge – it’s great on fries, nuggets, or wraps too.

Ingredients
Chicken & Marinade
1 chicken breast (about 310 g), halved into 2 thin fillets
150 ml pickle juice
60 ml milk
1 tsp salt
1 tsp paprika
1 tsp garlic powder
½ tsp black pepper
½ tsp MSG (optional, for umami)
Breading
150 g all-purpose flour
Same spices as the marinade (salt, paprika, garlic, pepper, MSG if using)
Egg Wash
80 ml milk 1 egg
Other Components
3 buns, buttered & toasted (recipe for homemade buns here)
24 pickle slices
6 slices of tomato (or 3 large ones)
3 slices American cheese (or cheddar, for melty perfection)
3 Crisp lettuce leaves
Chick-fil-A Style Sauce
3 tbsp mayonnaise
1 tbsp honey
1 tbsp yellow mustard
1 tbsp BBQ sauce
½ juice of a lemon
½ tsp garlic powder
Salt and pepper to taste

Instructions
Marinate the Chicken
Slice the chicken breast into 2 thin fillets. Mix pickle juice, milk, and all the spices in a bowl. Add the chicken, cover, and marinate for at least 1 hour (up to overnight).
Prepare the Coating
In one bowl: whisk milk and egg. In another bowl: combine flour and the spices.
Bread the Chicken
Remove chicken from the marinade. Dredge in seasoned flour, dip into egg wash, then back into the flour for a double coating.
Fry
Heat oil to medium-high (around 175–180°C). Fry the chicken until golden brown and crispy, about 4–5 minutes per side. Let rest briefly on a wire rack.
Make the Sauce
Stir together mayo, honey, mustard, BBQ sauce, ketchup, and garlic powder until smooth.
Assemble the Sandwich
Toast the buns in butter. Spread sauce on the bottom bun. Add lettuce, tomato slices, and pickles. Place the crispy chicken on top. Place the cheesy, crispy chicken on top (I recommend doing it right after they come out of the hot oil) Drizzle with more sauce and close with the top bun.
